A spendid castle perched over the lovely Tuscany hills, and with a superbly accomodating staff. It's a delight to have a dinner here, in this incredible setting, once you understand that their 'nouvelle cuisine' had solid roots in this exceptional territory. Their foie gras is excellent! And they really do try to please their customers, they found a Martini glass somewhere to please my aesthetic sense and if the gin selection was limited, they made up for it with a generous portion of Tanqueray and a very gentle behaviour, sadly missing at the Castelfaflfi Resort's bar.....I enjoyed this and the following dinner whilst the sun was setting

I hope that their gin selection will improve a little so we can put Franco Mare a bit higher on my classification. Even now it is anwyay one of the best Martini tasted in a high-class restaurant (pls remember that overhyped Bottura in Modena will not mix you a Martini....)
