'Principe' is the bar based near ‘Villa Toniolo’ in Bologna and there you can have a very good Martini, if you are a doctor or patient alike. They are are so good that they have spanned some very nice extensions, the more interesting being 'Principe in Centro' near Palazzo della Mercanzia

The Martini is quite good, very cold; savvily, Alessandro doesn't discuss the preferences of the customer ordering an extremely dry Martini, no lemons, one olive only. With the Martini they serve some 'cicchetti', and anyone familiar with the eponymous appetizers in Venezia knows how savory they are during a well-deserved aperitivo
